Sauteed Kale

Laura this one's for you:
1/2 tsp extra virgin olive oil
1 clove garlic, minced
1/2 bunch kale, cleaned and chopped into 1-in pieces
1/4 c. vegetable broth
1 tsp balsamic vinegar

Heat oil in saute pan. Add garlic, cook one minute. Add kale and broth, cover and cook 4 min. Remove kale from pan and drizzle balsamic vinegar.

I usually don't add the vinegar. If cooking with swiss chard, and sometimes kale too, I leave out the garlic if I don't want so much...um.. pungency
