Turkey Day, Thai style
Dad's Thai tenant/roommate/friend inspired a delicious Thai-style Thanksgiving meal. Dad was in charge of the turkey, Yvonne made Korean short-ribs, and Art and Tomoko made appetizers and a dessert of lychee ice. I was the, um, the uh, taster.
The MENU
Fried Won-Ton
Mix clean, diced shrimp together with ground pork, chopped celery bits, salt, peppar, Thai fish sauce ("Tiparos" brand) and oyster sauce. Put 1/2 teaspoon of mixture on won-ton wrapper and fold in half.
Thai salad
Shred green papayas and carrots. In seperate bowl, mash together 1 c long beans cut into 1 1/2" pieces, chopped garlic, cooked peanuts, lime juice, fish sauce, 1T dried shrimp, thai chili, palm sugar, and 3 T tomatoes. Pour on top of papaya and carrot mixture.
Dad's Fish Soup
Cut 3 Rock Cod filets into 4 pieces each, add to thinly sliced ginger in pot of boiling water. Add sliced and quartered daikon pieces, 1 " pieces of green onion and tofu squares and boil for 10 minutes.
Korean short ribs (kalbi)
Marinade the ribs (5lbs) with 6 cloves chopped garlic, 2-4 oz chopped ginger, 6 chopped green onions, 1/2 c soy sauce, 1/4 c water, 1/4 c sugar and 2 T sesame oil. Broil on high or 550degrees C for 8 minutes each side.
Massaman curry
Boil potatoes and chicken for 3-5 minutes and set aside. Bring 1/2 c coconut milk and in small can massaman curry paste to a boil. Add a bit of chicken stock left over and add chicken and potatoes to cook for 15-20 min longer. Add the chopped carrots at the end.
Rice cakes
Stir fry 1 T dried shallots and 1T dried shrimp in vegetable oil. Pour in 2 medium shredded Daikon, 3T sea salt, 4T oyster sauce and 1C water and cook. Seperately, combine 1 package rice powder with 2 C water and mix well. Turn heat off daikon mixture and slowly pour in rice mixture. Pour entire mixture into rice cooker pot and cook OR 9" pan and and bake for 40 minutes at 425.
Turkey!
Marinade a 15-20 lb bird overnight with 1C soy sauce, with juice of 5 limes, 5-8 cloves of garlic minced, 1T of ground ginger, 5 green peppers, sugar, and salt.
Bake for 3 hours at 350.
Sweet sticky rice
Soak the rice first 30min-2 hours. Soak 1/2 bag raw peanuts and 5-6 shitake mushrooms until soft 15-20 min. Cook peanuts in 3 T veg oil with a dash of salt, add 1T fried shallots, 1T fried shrimp, chicken pieces, the mushrooms, and oyster sauce for 5-7 minutes. Transfer to a rice cooker and cook as normal.
Lychee Ice
Blend the ice until smooth. Add a can of lychee including the juice. Mix and serve!
